| Historique |
Built by the English during “the One hundred year old War” towards the end of the XIII° century, this old fortified house was used as a basis advanced for the one of the largest castles of Périgord destroyed during the wars of religion, the Castle of Montcuq.
On the first chart of Belen, one sees that 2 activities were established near Grande Maison; the vine and size of stone runners for the mills of the area.
Henry IV, in 1608 made gift of the property to a lawyer of Bergerac, Charles de Livardie.
Thierry Després became owner into 1990 of the buildings and a field of 10 hectares including 4 in vines in very bad condition. Since, thanks to purchases and exchanges, the property took again its former size. Today, it counts 20 hectares including 15 of vines because of a vigorous policy of qualitative replanting.

| Informations |
Soil:
All the property is established on “lower molasses of the Resident of Agen” i.e. on carbonated clays and feldspathic micaceous sandstones. One of the characteristics of the soil is to profit from a very important silica outcrop which gives a certain acidity on the ground. The general exposure is full south and all the pieces are in more or less accentuated slopes. Encépagement: Important replantings which took place since 1991 made it possible to create homogeneous farming sets with qualitative understocks adapted to the conditions of the medium (grounds very limestones and acids). Today, the white vines represent 14 hectares including 15% in Sauvignon, 50% in Sémillon and 35% in Muscadelle. The quasi-integrality of the property is planted in narrow vines with 5000 feet/hectare. |

| Agriculture et Certifications |
Since the purchase of “Grande Maison” in 1990, the Schedule of conditions of Biological Agriculture European is respected. This is controlled, each year, by an independent organization (ECOCERT, BP 47 32600 Isle the Jordan), which gives the possibility of using the mention “Wine worked out starting from grapes resulting from Biological Agriculture”. This step was selected at the beginning from a qualitative point of view, the addition of chemicals having to be translated with short or long term by a “depreciation” of the potentialities of the soil. Since the departure thus, the vines are worked with” the old one”, i.e. without weeding, artificial fertiliser, any pesticide of synthesis.
With these traditional techniques, the contributions of the Biodynamique method have been added for soon 4 years. The ways are carried out in agreement with the lunar cycles and of liquid manure spreadings of plants (nettles, prèles, ferns) several times in the season are carried out. The total maintenance of the vineyard requires a large human investment bus with usual work is added a neat épamprage inside the vines, a “vintage in green” if necessary, a manual cleaning of each vine after the passage of the power tools to weed and a manual stripping of the 2 faces in August. All these techniques associated with quality and the soil give an exceptional precocity to the maturity of the grape what is often determining to carry out high-class wines. |

| Vinification et Chartes |
|
The harvest is done manually with the greatest care what frequently brings to grape harvest with the grain for the realization of the liqueur-like wines. Many successive sorting are carried out as well to obtain a perfectly ripe vintage for the dry white wines (5 successive passages for Sauvignon in 1998) that to have a homogeneous botrytized vintage of perfect quality for Monbazillac. All harvest is reported to the wine storehouses in small containers (primarily of the food plastic small cages of 10 kilos) to avoid oxidations. For the white wines, the technique of supra-extraction is very frequently used. It consists in freezing the whole grape then to press it at low temperature. This practice allows a better extraction of the flavours and richness of the grapes. Pressing is carried out in horizontal presses with plates with a manual management of tightenings so that the main part of the juice comes from crushed grapes with low pressure. Must is immediately protected from oxidation by CO2. After a light washing, the fermentations carried out starting from indigenous yeasts start out of tank then continue out of barrels wines essentially (70% for “Bergerac Secs”, 100% for the “Monbazillac barriqués”). Every year, the new wine is entonné in new barrels of 225 L of oak of the center of France. The aging with bâtonnages frequent, in first period, lasts approximately 11 months for “Bergerac Sec” and 22 month for the “Monbazillac barriqués”. |

The care granted to the vines and the work of the wine storehouses makes it possible to carry out high-class wines to keep. The ideal temperature of consumption is towards 12° C, Monbazillac gaining at to be open several hours before tasting. |
