| Situation |
We live at the ancient border between Occitania and Aragon, as you can notice many middle-age castles (Quéribus, Peyrepertuse, Puylaurens, and a bit further, Salses).
We are also at the geological border between Europe and an African island (Spain & Portugal): The meeting happened from -100 to -60 millions years ago (tertiary), that explains the significant presence of schists.
But the meeting is not over, it still goes on, and that dis-covers the primary and secondary eras' stratum, from where we are till the Pyrénéan summits.
That gives many different soils and altitude, so the terroirs have very much to say.

| Historique |
Our family allied to a slope of vines in 2000: an acre of Maccabeo!
Until 2004, we brought and hired few vineyards in different locations to get close to the terroir.
Now, we work 7 ha with 7 different soils (schits, limestones, granite, gypsum), on 5 different villages with a lot of old vines: half are more than 60 years old and they are real varities, not clones (where is variety with one clone?). |

| Informations |
Nature against culture?
After 30 years of intensive production, the vineyard needs a break. That' s why we turn to extensive for quite a while. Some call it minimum intervention, let's go for it, evenso it looks like we prefer the beach than the vine. Well, believe it or not, it's not true.
So, we plough the land once or twice a year, and mow the grass in June
We treat little with herb teas and sulphur
and we use no fertilizer; only cow dung and marc. |

| Agriculture et Certifications |
As we were not late at running after big tanins in the 90ies, we were also present for high maturity in the 2000ies. We were also not afraid about making wine with no sufites (let's say "nothing but grapes", some call it "natural wine").
We had some contrasting results and unstable wines (except the fortified wines and late harvest).
Now, we are looking for more balanced wines. |

| Vinification et Chartes |
I believe that making wine is a bit like surfboarding, it's just much slower...
We work with a liquid always moving, misteriously. It's easy to be thrown out, and get the mouthful. Then we have to wait for the next harvest...
And when, sometimes, we are in the wave, it brings some real good times (and I don't mean heavy drinking!). |

| Les Vins |
We only pick by hand, the team is family and friends.
We harvest only in the morning to limit oxydation.
We have no pump for the grapes or the marc: we want to respect the fruit as much as possible.
Each vineyard's grapes are vinified separately.
Wine from old vineyard are aged in oak barrels, from 1 to 3 years.
Very low use of sulfites. Some cuvées have no sulfites.

| Divers |
Is the spirit of organic still there?
People are now looking for organic, so many growers turn to it those last 2 years.
And we can't refuse to see all the lands restored from pesticides.
But I believe organic farming is more than a technique: the organic pioneer, like Howard in the XIXth century, fought against the almighty chemistry that was invading agronomy. They enhance the good sense of famers.
This good sense seems lost, let's rediscover it! |
