  About the winery
In the vineyard: to protect the soil an the expression of the terroir

Since 1985, our old vines, as well as more recently planted vines, have been farmed organically (biodynamically since 1996)

* Wer are using biodynamic preparations to reinforce the strenght of the vines against parasites.
* Ploughing and usage of natural compost to stimulate the biological life of our soil.
* Manual harvest

Our Results:
Healthy vines producing the right quantity of grapes. Excellent maturity of the grapes, and the right balance of sugar and acidity.
  Informations
Trimming
Probably the most important job of the year, trimming occurs from January through March. We go Through each vineyard before trimming to help us trim in accordance to what the vine can produce.

Budding
Trimming is followed by budding. The goal here is to regulate bunches output, and to give to the vine the nmeans to produce the best quality and quantity without overloading the vine. This is calles "yield control"

Ploughing
Emmanuel Giboulot has been farming biodynamically since 1996. The goal is not only to preserve the patrimony of Burgundy, but also to enrich our "terroirs".
In order to maintain an intense biological life in our soils and to enhance th relationships between the vine, the soil and the cosmos, we are carrying multiple ploughing methods and using natural compost.

A ploughed vine is surrounded by grass and plant partners, so as to respect the biotop.

The whole estate is biodynamically farmed. We are using cow manure fermented in cow horns, ground quartz (silica) and others regenerating preparations made of organs of vines.

  Vinification
Winemaking: A search for quality, integrity and respect for the natural expression of the grapes.

We carry as few operations as possible to let the "terroi" express itself.
* We only use indigenous yeasts
* Careful use of SO2 adapted to each wine.
* Temperatures are regulated during fermentation.
* White wines are fermented in oak barrels over a 12 to 15 months period.
* Red wines are fermented in traditional oak casks. Bunches are generally de-stemmed, sometimes only partially, depending on the vintage.
* Maturing is made in oak barrels. A thoughtful proportion of new oak is used as to not mask the primary characteristics of the fruit and to respect each "terroir".

As Emmanuel puts it "we like our wines to be net, clean, with poise and frankness. One must discover the vintage they belong to and the pace of the seasons. Each vintage, each appellation has its own personality and we try to keep our intervention to a minimum while mastering the use of modern technology".
